Peanuts are also called groundnuts. Peanuts are used in roasted, salted, fried and shelled forms. Its mild tasting oil, extracted by crushing peanuts is also used for light frying as it has high smoke value. Peanut oil is available in unrefined, refined, roasted and cold pressed forms. Commercially, peanuts are used extensively in the bakery, confectionary and roasting industry for its sweet taste and crunchy texture.
